Can I change the configuration of the chip during the operation?
for example: CY821434 set (ADC10_1, I2Cm_1), at run-time algorithm to disconnect  ADC10_1 and connect Cap Sensors CSD.

A word of caution, this would not be trivial as there are a number of issues

relating to "tuning" a cap sense design, but this should help you -
